Innovation factors in agri-food systems with Appellations of Origin: the case of Yahualica chile in Mexico.

Abstract

The localized agri-food systems (LAFS) that are around agri-food goods linked to the quality of origin such as appellations of origin (A.O) require the generation of innovation processes to tend towards a path of sustainability. This innovation depends on multiple factors, so the objective of this work is to analyze how a series of influence factors (input) impact in the innovative behavior (output) of producers in LAFS under the A.O, especially of a food deeply embedded in Mexican food culture: the Yahualica chili; this, through a qualitative methodology of case study, and quantitative method as survey and statistical analysis. It is concluded that the factor 'business sophistication', which identifies the articulation between actors for learning, is the element with the greatest impact on the innovative behavior of producers. This innovative behavior translates into a greater tendency to implement eco and marketing innovations. The case of innovation in the LAFS under the A.O chile Yahualica could reflect the path towards an integration of technologies and the conservation of territorial identities.
